My very dear friend Stacy over at Stacy Makes Cents approached me about testing a recipe for her new ebook called Crock On. Lemme tell ya, babe, I was stoked! I love to try new things, especially if it’s food related. Mama loves food. All kinds. They just don’t all love me. Ah well. So, I was lucky enough to try the Pineapple Pork Loin found on page 32. It was SO awesome. Even my husband loved it, and he’s not one for mixing meat with fruit. The pork came out of the crockpot crazy tender. It had just a bit of sweetness, but was also perfectly savory. In case you didn’t get it from the book title, this is a Crockpot cookbook, and the recipes are made with semi-whole food ingredients (more are than not). If you’re already a whole foods person, you can sub something that’s not whole foods for something that is that you know will work. For example, if something calls for soy sauce, just sub liquid aminos! If you don’t own a Crockpot, go get yourself one, or 3. Just do it, trust me. And shame on you for not having one already!
